I am setting up the diff preload and find I need extra shims to get the pre-load - 4thou for thrust bearings.
I suspect the new gaskets are thicker than the old ones, and I am short on shims.
Any issues leaving the side gaskets out and use RTV sealant instead?

My car has no side gaskets and doesn't leak there. But don't use RTV, use an anaerobic flange sealant designed for this. Loctite 515 or 518.

I've read that Rover dropped the gaskets in later years and just used sealant.
