The first question is ask is how far are you able or prepared to go to get the seats you want? If you are after a bolt in solution then you're limited to mini seats or aftermarket replacements that can fit the bolt pattern or with runners that will adapt. If you're prepared to do modifications to the body including a second crossmember or similar and getting the changes engineered then there's a lot more choice. Mine are Toyota mr2 seats, I'm very happy with them rear seat access is pretty good, they are very comfy and supportive and I was able to mount them centrally on the steering wheel which makes it more comfortable to drive. I did a second rear crossmember and a couple of pieces that fit over the front crossmember to raise the front but lower the back of the mr2 seats. If there are no rear seat belts the engineer might require these at the same time, I think a clubby should have them though?
There's a thread on the mini forum of all the seats people have fitted in the mini everything up to amend including Porshe and Ferrari seats... I couldn't find the thread at the moment though.
