What to people do to connect the vacuum hose when it's 10mm at the booster end and 12.5mm at the manifold?

Boiling water worth a try  .

I am working on that problem too.
The factory used a hose between the 2 sizes and one end was a tight fit ("boiling water"?). 12.5mm is a bit too big on the booster end. Not many places have much of a selection of vacuum hose.
The booster end usually has the non-return valve built into it but mine is not holding vacuum. I am fitting an inline non-return valve from a Mitsubishi Lancer (they are cheap) that is completely inside the vacuum hose and is not visible, but can't remember the hose size needed for it at the moment.
Can get back if quicker brains don't answer first.

what sort of fitting is at the manifold? if it's a brass, just buy a smaller one with the same thread...

Thread in most Mini manifolds is 5/8-18 UNF. This is slightly smaller than 3/8 BSP but almost the same pitch. I have modified many 3/8 brass barb fittings by turning down to 5/8 then use a UNF die nut. Can send one if necessary.

Turned the 12.5mm on down in the lathe
