My (relatively new) Smiths classic temperature gauge seems to be over-reading at 110C, whereas the electronic Engine Guardian which measures the temp of the actual engine block via a sensor mounted onto a thermo bolt has it at 78C. The Smiths gauge usually sits within 5 degrees of the latter.

I think the voltage stabiliser may be stuffed - the multimeter is showing 12 volts at the B post and 11.49 at the I posts. They're supposed to push out only 10 volts at the I posts.

I have a bin full of these things that I've collected over the years and they've all failed. I believe there are now more modern semi-conductor types available that do the same job and are far more reliable such as

Is anyone local doing something similar, I definitely don't want another original bi-metal Smiths one to add to the collection.

Don't forget that if its a new sensor, they can read high as well... There are 2 available one reads really low, and the other reads a few deg C over I believe... I have tried both, and settled on the one that reads a bit high.. mine sits at the N mark at 80 Deg mark..

The original type are electromechanical. They have a bi-metallic strip inside them which opens and closes their output. They will only ever output either the battery voltage (12.7V or whatever) or nothing. By switching on and off they are meant to average out at 10V. They also probably need a certain amount of load on them to work, so just testing them with a digital multimeter won't tell you anything.

The electronic stabilizers make even the old smiths gauges surprisingly consistent and accurate.
