Has anyone on the Forum ever re-skinned a winding window door themselves?
If so, was it complicated (it looks fairly easy to do on the interweb!!)
If I can't find a couple of decent second hand ones-I'm contemplating doing it myself (or paying someone else if it's cheap enough).

Yes,

Did 2 on my Deluxe, before that I had never changed a panel on a car in my life.
I followed Project Binky where they rebuilt the doors.
Linished round the edges to remove the rolled over metal.
Drilled out the spot welds.
Cut the weld at the top onto the window frame and the bit to the door frame just down a bit.
Cleaned it all up, painted the inside of the door frame.

You can not get Door skins to fit unless you find old stock, so you get an 850 skin, cut off the extra fold at the top along the window.
Measure up and remove the door handle mount from the old door skin.
I laid the old skin inside the new one to mark out the door handle stop and door handle cutout, this is bigger than the 850 one.
Cut out with a dremel or similar, drill holes for handle stop.
Line up and plug weld the handle mount from the old skin to the new one.
I painted inside the skin to help keep rust away.

Then you lay the frame in the new skin, clamp it down carefully and tap and fold away at the edges.
Test fit to the car.
Weld the skin to the door frame and window frame, I did a series of plug welds along the edges to replace the spot welds.
All went well for me, they fit the car nicely.
I used an old stock supposed to be genuine and a bit rusty skin and a Heritage one, fit and shape was the same and so close to the original ones (which were a bit beat up) that I could not see a difference.

ditto for Stewart's comments. I've done 2 now and it is fairly easy. You need some tools. 850 skins were once almost worthless but not now.

Don't watch too many episodes... it only causes overconfidence - they make it seem so easy!
The Minisport (adelaide) ones look exactly right. Other suppliers probably have similar or same.
The "modifications" required are what Stewart has explained.
