Well the Mk1 MCS looks more likely that it will become a daily. With that, the wife won't allow the kids to go in the car without seatbelts. There are no belts in the back because it's original. Belts are only about $85... is it easy to get them retrofitted? Will it ruin the car?

Have a look at a late (??) Clubbie fitted with factory rear belts. Then consider how much it might cost to have the structure (deemed necessary by the factory to pass the regulations) replicated on your car.

I have seen it done - by an owner with considerable fabrication skills... Although I doubt the finished product would actually meet ADRs for child restraints...

This has been discussed a few times previously so perhaps do a search on "rear seat belts" or similar.

Children and seat belts is a critical combination. If I were in your position I would get the advice of one of those licensed seat belt installation places, a reputable one. They know the laws, as well as the practical and sensible options given the age of the car.

Having said that others on here have done their own thing.

I've posted the BMC engineering drawing for the rear parcel shelf elsewhere showing the welded bracing added for strength as seat belt laws developed. Let me know if you can't find it.
