Mine generally sits on about 180-190 deg Fahrenheit, (82-87 deg Celsius). But remember thats hot n humid Cairns weather.

My thermostat is somewhere in the high 70 deg range, i forget... And ive got a 6 blade fan with 3 core radiator.

Dont have oil temp so cant help there.

Theoretically, your car should sit somewhere between 70 and 95 Celsius. Theories are nice things, but not always practical. My car was tested, and was sitting around 75C. Beautiful. Looked at my temp gauge, it said 90C. So it pays to check the accuracy of your gauge (mine's a VDO). There are a few variables that determine how accurately they'll measure, not all of which you can control. Mine was tested by a Mini man with a turkey/BBQ thermometer in the top of the radiator!
At the end of the day, if your car's been running fine, not overheating or playing up, just drive it around for a few days and see where it tends to sit. If it's consistently in the same area, it's most likely running fine. If you want, start the car with the radiator cap off, stick a thermometer in there, and see what it gets up to. Even if the numbers the gauge is pointing to are a bit different to the real numbers, the relative scale is still applicable - if it's running hotter than normal, it's running hot!
I don't know where your oil should be running temperature wise, but I'd imagine the same would apply. :)

interesting its either my gauge is wrong or my mini runs at 50-60 celcius and the oil pressure at idle around 20 and while running at around 45

Tiny, odds are your gauge is wrong. I reckon you'd have a very hard time finding a thermostat that opens at anything under 70C. So, if your gauge's sender unit is in the thermostat housing (as they tend to be), or anywhere on the hot side of the flow (thermostat to top of radiator), it's reading low. Doesn't make much difference though - you just know that if it hits 80, it's time to figure out what's wrong!
