That's why I said beware, $70 per hour (sounds like a bargain), and its designed to rope you in...one of the oldest tricks in the book.
Probably around $110-150 per for the average shop might be closer. But you still have the problem of what you are told has been done...and this can be covered by "well, it looked good on the outside but we found a lot to do under the skin etc".
Some shops have another overhead, step-by-step photographs documenting what has been found and what has been done to correct/restore.
A fixed quote can be a good way to go...the restorer needs to pad out areas they think may be a problem, and fair enough.
Timeframe is another consideration, the excuses for delay are legion, some valid some not...I have seen one that was being done as the lowest priority in the shop...if you are not in a hurry, no problem, but bear in mind a job that is done in fits and starts can be less than ideal.
There are honest john shops around and there are others...
