Ok, nearly there on the doors - last question hopefully

There was a felt piece between the door skin and door catch on one of my doors. I assume it is to stop dust/water coming in so i want to replace. Any thoughts on what with ? Should I try find some felt, or dense form foam.

Same goes for other areas on the car like under fuel tank and between pedal box and parcel shelf. That was horse hair by the looks. What does everyone replace it with, high density foam ?

Spotlight sell felt materials and other useful upholstery things you can cut to shape.
'Home Upholsterer' sell underfelt for the floor and other applications you mention, a good range of automotive vinyls, etc. You can glue the underfelt to vinyl for the parcel shelf and engine sound-proofing, as premade felt-backed vinyl seems hard to come by now.

I am thinking of using the foam on the fuel tank bases and rear subframe too.

This what I used as insulation packing on the subframe. Purchased from Bunnings.
